ANALISIS KANDUNGAN BORAKS PADA JAJANAN BAKSO TUSUK DI LINGKUNGAN UNIVERSITAS SAM RATULANGI MANADO

Abstract


Bahan Tambahan Pangan (BTP) merupakan bahan yang ditambahkan ke dalam pangan untuk mempengaruhi sifat dan/atau bentuk pangan. Asam borat senyawa bor yang dikenal juga dengan nama boraks. Boraks biasanya bersifat iritan berbahaya bagi susunan saraf pusat, ginjal dan hati. Bakso merupakan salah satu jajanan makanan yang sangat digemari oleh masyarakat. Tujuan dari penelitian ini untuk mengetahui kandungan boraks dalam jajanan bakso tusuk yang dijual di Lingkungan Kampus Universitas Sam Ratulangi Manado. Jenis Penelitian ini ialah deskriptif, dilaksanakan pada bulan April- September 2018 dengan tempat penelitian ini di Lingkungan Kampus Universitas Sam Ratulangi Manado Populasi dan sampel dalam penelitian ini yaitu delapan pedagang bakso tusuk yang tersebar di Lingkungan Kampus Universitas Sam Ratulangi Manado Pengambilan sampel bakso tusuk dilakukan dengan metode purposive Sampiling, Hasil penelitian ini menunjukkan bahwa dari delapan sampel bakso tusuk yang diperiksa secara kualitatif diperoleh hasil negatif dan tidak mengandung boraks. Berdasarkan hasil diatas dapat disimpulkan bahwa delapan sampel bakso tusuk yang dijual di Lingkungan Kampus Unsrat tidak mengandung boraks. Perlu adanya pemeriksaan yang lebih akurat dengan menggunakan spektrofotometri


ABSTRACT
Food Additives (BTP) are ingredients that are added to food to influence the nature and/or form of food. Boric acid drill compounds are also known as borax. Borax usually irritants, dangerous to the central nervous system, kidneys and liver. Meatballs are one of the foods that are very popular in community. The purpose of this study was to determine the content of borax on meatball skewers that were sold at the Sam Ratulangi University Campus in Manado. This type of this research was descriptive, carried out from April to September 2018 and the research took place in the Sam Ratulangi University Campus Environment in Manado. The population and sample in this study were eight stab meatballs traders who were scattered in the Sam Ratulangi University Campus Environment, Manado. The samples of meatballs skewers were using purposive sampling method. The result of this study showed that all eight meatball samples that were qualitatively examined obtained negative result or did not contain borax. Based on the results above, it can be concluded that eight samples of meatball skewers that were sold in the campus environment of Sam Ratulangi University did not contain borax. More accurate examination using spectrophotometry are needed.
