Abstract: Saliva has an important role in the oral cavity. Poor salivary secretion can lead to complaint of dry mouth, that can be caused by several factors, inter alia age. Salivary flow rate may increase due to mechanical stimulation such as gargling, and chemical stimulation such as taste effects. Over ripe coconut water contains tannins that cause a bitter taste that can stimulate saliva secretion. This study aimed to evaluate the effect of gargling over ripe coconut water (Cocos nucifera L.) on the rate of salivary flow. This was an experimental study with a pre-experimental research design, and one group pretest-posttest design approach. Samples were residents of Desa Tateli Weru aged 60 years and above, using the purposive sampling method. The results showed that there was an increase of salivary flow rate from 0,543255814 mL/minute to 0,78 mL/minute after gargling with over ripe coconut water. The Wilcoxon test obtained a p-value of <0.05. In conclusion, gargling with over ripe coconut water (Cocos nucifera L.) can affect salivary flow rate in the elderly.
