ANALISIS KANDUNGAN FORMALIN PADA BERBAGAI JENIS IKAN DI KOTA MANADO

ABSTRACT
Preservatives were discuss more lively among the people is the use of formaldehyde as a preservative of food materials. The purpose of this study was to determine the presence of formaldehyde in various types of fish in the city of Manado. Samples of tuna, carangid fish, salted fish and anchovy was collected from the traditional markets (market A and B) and supermarket A in the city of Manado. Samples were assayed qualitatively using Schiff reagent to determine the coloration change. The results showed that the samples of fish that were in the city of Manado did not contain formaldehyde, safe to eat and good for health.

ABSTRAK
Pengawet yang ramai dibicarakan di kalangan masyarakat adalah formalin sebagai pengawet bahan makanan. Tujuan penelitian ini untuk mengetahui keberadaan formalin pada berbagai jenis ikan di Kota Manado. Sampel ikan cakalang, ikan tude, ikan asin dan ikan teri diambil pada pasar tradisional (pasar A dan pasar B) dan pasar swalayan A di Kota Manado. Sampel diuji secara kualitatif dengan menggunakan pereaksi Schiff untuk mengetahui perubahan warna. Hasil penelitian menunjukan bahwa sampel ikan yang berada di Kota Manado tidak mengandung formalin, aman untuk dikonsumsi dan baik untuk kesehatan.
