IDENTIFIKASI KANDUNGAN FORMALIN PADA IKAN ASIN DI BEBERAPA PASAR TRADISIONAL DI KOTA MANADO
Abstract
Formalin merupakan salah satu zat tambahan yang dilarang dalam makanan. Formalin sering ditemukan pada makanan sehari-hari yang dikonsumsi seperti mie basah, ikan asin, tahu, bakso, dan lain-lain. Penambahan formalin tidak dianjurkan dikarenakan dapat menyebabkan keracunan. Sebanyak 57 berita keracunan pangan salah satunya kasus keracunan akibat ikan asin terhadap 11 orang, Tujuan Penelitian: Untuk mengidentifikasi kandungan formalin pada ikan asin di beberapa pasar tradisional di Kota Manado. Metode Penelitian: Penelitian ini menggunakan jenis penelitian eksplorasi, untuk menyelidiki masalah yang tidak didefinisikan dengan jelas dengan adanya pemahaman yang lebih baik tentang masalah yang ada, tetapi tidak akan memberikan hasil yang konklusif. Penelitian ini dilakukan di Pasar Paniki, Pasar Bersehati, dan Pasar Pinasungkulan pada September - Oktober 2020 dengan jenis sampel yang diambil yaitu ikan asin kakatua, ikan asin teri, ikan asin anthony, dan ikan asin masako yang di uji menggunakan uji khromotrofik. Hasil Penelitian: Berdasarkan hasil penelitian yang telah dilakukan dari 14 sampel ikan asin dan dilakukan analisis di Laboratorium BARISTAND Manado dengan metode pengujian Uji Asam Khromotrofik menunjukkan 14 sampel ikan asin tersebut tidak mengandung formalin. Kesimpulan: Ikan asin yang dijual di beberapa pasar tradisional di Kota Manado dengan banyaknya sampel 14 sampel ikan asin didapati hasil negatif atau tidak adanya kandungan formalin.

ABSTRACT
Formalin is an additive that is prohibited in food. Formalin is often found in daily consumed foods such as wet noodles, salted fish, tofu, meatballs, and others. The addition of formalin is not recommended because it can cause poisoning. There were 57 news about food poisoning, one of which was the case of poisoning due to salted fish to 11 people. Research Objectives: To identify the formalin content of salted fish in several traditional markets in Manado City. Research Methods: This research uses exploratory research type, to investigate problems that are not clearly defined in the presence of a better understanding of the problem at hand, but will not provide conclusive results. This research was conducted at Paniki Market, Bersehati Market, and Pinasungkulan Market in September - October 2020 with the types of samples taken, namely salted parrot fish, salted anchovies, salted anthony fish, and salted masako fish which were tested using the chromotrophic test. Results: Based on the results of research that was carried out from 14 samples of salted fish and analyzed at the BARISTAND Manado laboratory with the chromotrophic acid test method, it showed that 14 samples of salted fish did not contain formaldehyde. Conclusion: Salted fish sold in several traditional markets in Manado City with a large sample of 14 salted fish samples were found to be negative or without formalin content.
