ABSTRACT
Pineapple is a fruit which looks like ferns containing vitamin A and vitamin C that can be used as antioxidant and to improved immunity. This research aims to make pineapple juice effervescent granules formulation and to perceive the effects of acid and base concentrations difference to effervescent granules physical characters. Pineapple juice effervescent powders were made in three formulations with sodium bicarbonate and acid (tartrate acid and citrate acid) as follows : Formula 1 = 2,5 : (2 : 1), formula 2 = 3 : (2 : 1), formula 3 = 3,5 : (2 : 1). In formula 1, a results were 0,6% for water content, 7,2 seconds for flow rate, 30,52° for angle of repose and 2,41 minutes for dispersion time. In formula 2 the results were 0,8 % for water content, 8,7 seconds for flow rate, 32,61° for angle of repose and 3,25 minutes for dispersion time. As for formula 3 the results were 0,9 % for water content, 9,2 seconds for flow rate, 33,08° for angle of repose and 3,45 minutes for dispersion time. The difference of acid and base in the three formulations effect on effervescent granules physical characters.

ABSTRAK
Tanaman nanas merupakan tanaman buah berupa semak yang mengandung vitamin A dan C. Vitamin yang paling dominan pada buah nanas ialah vitamin C yang berguna sebagai antioksidan dan sangat baik untuk meningkatkan daya tahan tubuh. Penelitian ini bertujuan untuk membuat formulasi sediaan granul effervescent sari buah nanas dan untuk mengetahui pengaruh perbedaan konsentrasi asam dan basa terhadap sifat fisik granul effervescent. Serbuk effervescent sari buah nanas dibuat dalam tiga formulasi dengan rasio Natrium Bikarbonat dan asam (asam tartrat dan asam sitrat) sebagai berikut : formula 1 = 2,5 : (2 : 1), formula 2 = 3 : (2 : 1), formula 3 = 3,5 : (2 : 1). Pada formula 1, didapatkan hasil pengujian kadar air 0,6%, kecepatan alir 7,2 detik, sudut diam 30,52° dan waktu dispersi 2,41 menit. Pada formula 2, didapatkan hasil pengujian kadar air 0,8%, kecepatan alir 8,7 detik, sudut diam 32,61° dan waktu dispersi 3,25 menit. Sedangkan pada formula 3 didapatkan hasil pengujian kadar air 0,9%, kecepatan alir 9,2 detik, sudut diam 33,08° dan waktu dispersi 3,45 menit. Perbedaan asam dan basa pada ketiga formulasi berpengaruh terhadap sifat fisik sediaan granul effervescent.
