ABSTRACT
This study was conducted to determine the effect of crude extract containing the enzyme peroxidase from cabbage to the antioxidant activity of the extract of corn cobs. Extraction of corn cobs performed using ethanol 80% with reflux for 2 hours while extracting the enzyme from cabbage with solvent phosphate buffer pH 7. Then the content of secondary metabolites tested before and after the addition of crude extract enzyme peroxidase. Whereas to determine the antioxidant activity was tested by the ability of free-radical scavengers DPPH and hydroxyl radical scavengers Then the total antioxidant extracts was measured with a spectrophotometer. Results of the analysis of the highest content of total phenolic fraction obtained from the enzyme at 124.39 mg / kg, followed by P4 81.53; P1 75.41; P3 67.24 and P2 50.92 mg / kg. Results of the analysis of antioxidant activity was also obtained from the enzyme fraction. The ability of hydroxyl radicals in the highest rat tissue homogenates were also obtained from the enzyme fraction of 90.1%. Results of this study concluded that the addition of crude extract containing the enzyme peroxidase from cabbage provides enhanced phenolic and flavonoid content also increases the antioxidant activity of the extract of corn cobs.

ABSTRAK
Penelitian ini dilakukan untuk mengetahui pengaruh penambahan ekstrak kasar yang mengandung enzim peroksidase dari kubis terhadap aktivitas antioksidan ekstrak tongkol jagung. Ekstraksi tongkol jagung dilakukan menggunakan pelarut etanol 80% dengan metode refluks selama 2 jam sedangkan ekstraksi enzim dari kubis dengan pelarut buffer fosfat pH 7. Kemudian dilakukan pengujian kandungan metabolit sekunder sebelum dan setelah penambahan ekstrak kasar enzim peroksidase. Sedangkan untuk mengetahui aktivitas antioksidan diuji berdasarkan kemampuan penangkal radikal bebas DPPH dan penangkal radikal hidroksil Kemudian total antioksidan ekstrak diukur dengan spektrofotometer. Hasil analisis kandungan total fenolik tertinggi diperoleh dari fraksi enzim sebesar 124,39 mg/kg, diikuti oleh P4 81,53; P1 75,41; P3 67,24 dan P2 50,92 mg/kg. Hasil analisis aktivitas antioksidan juga diperoleh dari fraksi enzim. Kemampuan menangkal radikal hidroksil dalam homogenat jaringan tikus tertinggi juga diperoleh dari fraksi enzim sebesar 90,1%. Hasil penelitian ini menyimpulkan bahwa penambahan ekstrak kasar yang mengandung enzim peroksidase dari kubis memberikan peningkatan kandungan fenolik dan flavonoid juga meningkatkan aktivitas antioksidan terhadap ekstrak tongkol jagung.
