GAMBARAN KONSUMSI YOGHURT TERHADAP WAKTU PENINGKATAN pH SALIVA

ABSTRACT
One of the instant products often for the society is yogurt. Yoghurt has many benefits for the human body but because of lack of information and knowledge of yoghurt so yoghurt is considered limited only to help the body's digestive system. The aciditic state inside the mouth at pH 5.5 will lead to demineralization of dental caries. An alternative way to overcome circumstances that are too acidic in the mouth is by consuming yoghurt. The purpose of this research was to know the description of yoghurt consumption over time increase the pH of saliva seen from how many minutes increased to normal salivary pH (pH = 7). This study is a quasi-experimental design with One group time series design. Sample for this research is students of Education Studies Dentist Sam Ratulangi University class of 2011. Saliva collection was conducted by spitting method for five minutes and then measured using a digital pH meter pHep from Hanna. The saliva taking divided into two pretest and posttest until the pH became normal. The result of the research gain 19 samples contained increased salivary pH to pH 7.0. Seen from time ph to be normal ( ph = 7 ) by 5 minutes to as much as 4 samples, by 10 minuttes to as much as 11 samples, and by 15 minutes to as much as 15 samples approaching to normal pH. The conclusion of this study, there are differences in the response of each of the respondents to the yogurt, so that the advantage of yogurt are not the same for everyone.

ABSTRAK
Salah satu produk siap saji yang sering dikonsumsi masyarakat adalah yoghurt. Yoghurt memiliki banyak manfaat bagi tubuh manusia, tetapi karena kurangnya informasi dan pengetahuan tentang yoghurt, maka yoghurt dianggap hanya terbatas untuk membantu sistem pencernaan tubuh. Keadaan yang terlalu asam dalam mulut pada pH 5,5 akan mengakibatkan demineralisasi kemudian karies gigi. Cara alternatif untuk menanggulangi keadaan yang terlalu asam dalam mulut yaitu dengan konsumsi yoghurt. Tujuan penelitian ini untuk mengetahui gambaran konsumsi yoghurt terhadap waktu peningkatan pH saliva dilihat dari berapa menit pH saliva meningkat menjadi normal (pH=7). Penelitian ini merupakan penelitian quasi-eksperimental dengan rancangan One group time series design. Sample penelitian ialah mahasiswa Program Studi Pendidikan Dokter Gigi Universitas Sam Ratulangi angkatan 2011. Pengumpulan saliva dilakukan dengan metode spitting selama lima menit kemudian diukur menggunakan pH meter digital dari Hanna. Pengambilan saliva terbagi atas pretest sebanyak dua kali dan posttest sampai pH menjadi normal. Hasil penelitian didapatkan terdapat 19 sampel mengalami peningkatan pH saliva menjadi pH 7,0. Dilihat dari waktu pH menjadi normal (pH=7) pada menit ke 5 sebanyak 4 sampel, menit ke 10 sebanyak 11 sampel, dan menit ke 15 sebanyak 15 sampel mendekati pH normal. Kesimpulan penelitian ini, terdapat perbedaan respon masing masing responden terhadap yoghurt, sehingga manfaat yoghurt tidak sama untuk setiap orang.
