ABSTRACT
Foki sabarati or known as takokak is of many plants that can be use as vegetble and be eat raw in North Maluku especially in Tidore Island, this plant allegedly potential as antioxidant. The aims of this research is to determine the antioxidant activity and toxicity level of Foki Sabarati ethanol extract. The extraxtion method was done using maceration and ethanol as solvent. Total phenolic and total flavonoid content also antioxidant activity were done with DPPH method and toxicity assay with BSLT method. Based on the result Foki Sabarti has 58,375 mg/L as the highest total phenolic content, 12,807 mg/L flavonoid content. The highhest value of antioxidant activity in Foki Sabarati is its IC50 value 49,824 mg/L and toxicity level in ethanol extract with LC50 113,762 mg/L which categorized as toxic.

ABSTRAK
Foki sabarati atau biasa disebut takokak merupakan salah satu tanaman yang dimanfaatkan sebagai sayuran dan lalapan di Maluku Utara khususnya dipulau Tidore, tanaman ini diduga berpotensi sebagai antioksidan. Tujuan penelitian ini adalah untuk menentukan aktivitas Antioksidan pada ekstrak etanol daun foki sabarati dan menentukan kadar toksisitas pada ekstrak etanol daun foki sabarati. Metode ekstraksi dalam penelitian ini menggunakan maserasi dengan pelarut etanol. Ekstrak yang diperoleh ditentukan total fenolik dan flavonoid serta diuji aktivitas antioksidan dengan metode DPPH dan toksisitas dengan metode BSLT. Berdasarkan hasil yang didapat ekstrak daun foki sabarati memilki kandungan total fenolik paling tinggi sebesar 49,015 mg/L, dengan diikuti total flavonoid sebesar mg/L. Berdasarkan hasil penelitian menunjukkan bahwa ekstrak foki sabarati memiliki aktivitas antioksidan yang paling baik dengan nilai aktivitas IC50 11,965 mg/L dan Kadar toksisitas pada ekstrak etanol daun foki sabarati memiliki sifat toksik dengan nilai LC50 sebesar 113,762 mg/L.
