The purpose of the study was to determine the utilization of the extract of the polyphenol of stem sponge barrel and determine the antioxidant activity of the stem bark of the sago baruk. Polyphenol extracts were used in TBA testing, total phenolic, flavonoid, tanin, and antioxidant activity testing using DPPH method. The results showed that antioxidant compounds could be used to help inhibit the occurrence of rancidity (decay) on a material. The extract of sponge stem barrel showed the antioxidant activity by testing with DPPH with highest activity value was 60 % at hotplate drying, while in extract by solar heating, it was in the second highest value that was 45,75 %.

 penelitian ini untuk menentukan pemanfaatan dari ekstrak polifenol empelur batang sagu baruk dan menentukan aktivitas antioksidan empelur batang sagu baruk. Ekstrak polifenol dimanfaatkan pada pengujian TBA, pengujian kandungan total fenolik, flavonoid, tanin dan penentuan aktivitas antioksidan menggunakan metode DPPH. Hasil penelitian menunjukan senyawa antioksidan dapat dimanfaatkan untuk membantu menghambat terjadinya ketengikan (pembusukan) pada suatu bahan. Ekstrak empelur batang sagu baruk menunjukkan adanya aktivitas antioksidan melalui pengujian dengan DPPH dengan nilai aktivitas tertinggi yaitu 60 % pada pengeringan hotplate, sedangkan pada ekstrak dengan cara pemanasan matahari, berada pada nilai tertinggi kedua yaitu 45,75 % .
