ABSTRACT
Coconut processed products such as refreshing soft drinks and nata de coco are processed products, which love by today’s society. Sodium cyclamate is an artificial sweetener whose use is allowed, but may not exceed its limits. This study aims to determine the presence of sodium cyclamate and the levels of sodium cyclamate in soft drinks and nata de coco freshness circulating in Manado City Supermakets. Identification of sodium cyclamate was performed using HCl, BaCl2, and NaNO2 characterized by the formation of white precipitate after heating. Validation methods were performed using parameters such as linearity, accuracy, precision, detection limits and quantitation limits. The liniear relationship between concentration and absorbance is shown by the equation of y = 0.0027 x – 1.809 with r = 0.9991 so it can be explained that the correlation between absorbance and the standard of cyclamate is very strong. The detection limit obtained was 2.234 ppm and the quantity limit was 7.445 ppm. The precision value was expressed by RSD of 1.5% and 1.7%, which means good precision. Test accuracy with recovery rate of 103.66%. The results showed that the sodium cyclamate content in the sample was not detected either qualitative or quantitative analysis.

ABSTRAK
Produk olahan kelapa seperti minuman ringan penyegar dan nata de coco merupakan olahan yang diminati masyarakat masa kini. Natrium siklamat adalah pemanis buatan yang penggunaannya dibolehkan, namun tidak boleh melebihi batas penggunaanya. Penelitian ini bertujuan untuk mengetahui keberadaan natrium siklamat dan kadar natrium siklamat dalam minuman ringan penyegar dan nata de coco yang beredar di Swalayan Kota Manado. Identifikasi natrium siklamat dilakukan dengan menggunakan HCl, BaCl2, dan NaNO2 yang ditandai dengan terbentuknya endapan berwarna putih setelah dipanaskan. Validasi metode dilakukan dengan menggunakan parameter-parameter seperti linearitas, akurasi, presisi, batas deteksi dan batas kuantitasi. Hubungan linier antara konsentrasi dengan absorbansi ditunjukkan dengan persamaan y = 0,0027 x – 1,809 dengan nilai r = 0,9991 sehingga dapat dikatakan korelasi antara absorbansi dan konsentrasi standar siklamat sangat kuat. Batas deteksi yang didapat 2,234 ppm dan batas kuantitas adalah 7,445 ppm. Nilai presisi dinyatakan dengan RSD sebesar 1,5 % dan 1,7 % yang berarti presisi baik. Uji akurasi dengan perolehan kembali sebesar 103,66 %. Hasil penelitian menunjukkan bahwa kandungan natrium siklamat pada sampel tidak terdeteksi baik analisis kualitatif maupun kuantitatif.
