Fish packaged in cans could be contaminated with heavy metals derived from canned components, production tools and packaging processes. Contamination of heavy metals will be harmful when entering into the body's metabolism in amounts exceeding the threshold determined by the Food and Drug Administration (BPOM). This research was conducted to analyze heavy metals Copper (Cu) with three different brands that were randomly taken. Ditizon 0,005% b/v solution was used in qualitative test which to know the heavy metal content of copper (Cu) in the sample. The results of this research indicate that the heavy metal content of copper (Cu) of the three brand samples tested in an atomic absorption spectrophotometer (SSA) does not exceed the maximum metal contamination threshold on predefined food. The concentration of heavy metal copper (Cu) in North Sulawesi local canned fish packaging sample with brand PM (306) is 0.0178 mg/kg, F (307) is 0.0143 mg/kg, C (308) is – 0.0241 mg/Kg.

Ikan yang dikemas dalam kemasan kaleng dapat terkontaminasi logam berat yang berasal dari komponen kaleng, alat-alat produksi dan proses pengemasan. Kontaminasi logam berat akan berbahaya bila masuk ke dalam metabolisme tubuh dalam jumlah melebihi ambang batas yang ditentukan oleh Balai Pengawasan Obat-obatan dan Makanan (BPOM). Penelitian ini dilakukan untuk menganalisis logam berat Tembaga (Cu) dengan tiga merek berbeda yang di ambil secara acak. Pada pengujian kualitatif digunakan larutan Ditizon 0,005% b/v untuk mengetahui adanya kandungan logam berat tembaga (Cu) pada sampel. Hasil penelitian ini menunjukan bahwa kandungan logam berat tembaga (Cu) dari ketiga merek sampel yang diuji menggunakan spektrofotometer serapan atom (SSA) tidak melebihi ambang batas maksimum cemaran logam pada pangan yang telah ditentukan. Konsentrasi logam berat tembaga (Cu) dalam sampel ikan kemasan kaleng produksi lokal Sulawesi Utara dengan kode PM (306) sebesar 0,0178 mg/kg, F (307) sebesar 0,0143 mg/kg, dan C (308) – 0.0241 mg/Kg.
