ANALISIS FORMALIN PADA BUAH IMPOR DI KOTA MANADO

ABSTRACT
Formaldehyde (H2C = O) is a hazardous, toxic and carsinogenic material that is commonly added to foods as preservative. The purpose of this research are to indentify and determine formalin level on imported fruits in Manado City. The sample were taken from three supermarkets in Manado City namely Supermarket A, Supermarket B and Supermarket C. The formalin on sample examined by color changing method using Schiff reagen. The formalin level was determined by using spectrophotometry UV-Vis. The result shows that unwashed samples contains 0,080 - 0,195 µg/mL formalin and washed samples contains 0,060 - 0,136 µg/mL formalin.

ABSTRAK
Formaldehida (H2C = O) adalah bahan berbahaya, beracun dan bersifat karsinogenik yang biasanya ditambahkan ke dalam bahan pangan sebagai pengawet. Tujuan penelitian ini yaitu untuk mengidentifikasi dan menentukan kadar formalin pada buah impor di Kota Manado. Lokasi pengambilan sampel buah impor ialah 3 pasar swalayan di Kota Manado antara lain Supermarket A, Supermarket B dan Supermarket C. Formalin dalam sampel diuji menggunakan identifikasi perubahan warna pereaksi Schiff. Kadar formalin ditentukan menggunakan spektrofotometri UV-Vis. Hasil penelitian menunjukan bahwa sampel yang tidak dicuci memiliki kandungan formalin 0,080 -  0,195 µg/mL dan sampel yang dicuci memiliki kandungan formalin 0,060 - 0,136 µg/mL.
