ABSTRACT
Soy milk is processed beverage extracted from soy. Soy milk can be used as a refinement of foods. Contamination of microorganisms in soy milk occursbecause the handling and processing of milk that is not right. The aim of this research to analyze bacterial contamination on soy milk sold in supermarkets with the random sampling method of the five supermarkets in Manado city. The research includes inspection of total plate count (TPC), Coliform bacteriaand Escherichia coliidentification. Based on result showed that tested of the five samples soy milk contain microbial contamination in the range 1,9 x 1,106 to 1,8 x 107 colonies/ml. All samples contained Coliform bacteria so it is not fulfill the specified requirements of ISO No.3788:2009 that is 30 MPN/ml sample. The identification of Escherichia coli bacteria so it is not specified requirements in Indonesian National Standards (SNI 01-3830-1995)

ABSTRAK
RUMAIDASARI HASBULLAH. Analisis Cemaran Bakteri Coliform dan Identifikasi Escherichia coli Pada Susu Kedelai yang di jual di Supermarket Kota Manado. Di bawah bimbingan FATIMAWALI sebagai ketua, dan NOVEL KOJONG sebagai anggota.
Susu kedelai merupakan minuman olahan hasil ekstraksi dari kedelai, susu kedelai dapat dipakai sebagai penyempurnaan makanan. Cemaran mikroorganisme dalam susu terjadi karena penanganan dan pengolahan susu yang tidak tepat. Penelitian ini bertujuan untuk menganalisis cemaran bakteri pada susu kedelai yang di jual di Supermarket dengan metode pengambilan sampel secara acak dari 5 Supermarket di Kota Manado. Penelitian meliputi pemeriksaan Angka Lempeng Total (ALT), bakteri Coliform dan identifikasi Escherichia coli. Berdasarkan hasil menunjukan bahwa ke 5 sampel susu kedelai yang di uji mengandung cemaran mikroba yang berkisar antara 1,9 x 106sampai 1,8 x 107koloni/ml. Semua sampel mengandung bakteri Coliform sehingga tidak memenuhi syarat yang di tetapkan SNI no.3788:2009  yaitu 30 APM/mL sampel. Pada identifikasi Escherichia coli semua sampel positif mengandung bakteri Escherichia coli sehingga tidak memenuhi syarat yang di tetapkan dalam Standar Nasional Indonesia (SNI 01-3830-1995).
