Abstract: Healthy eating behavior plays an essential role in preventing various health issues, such as obesity and non-communicable diseases (NCDs), which can affect all age groups. The prevalence of central obesity among individuals with higher education levels is significant, especially in women. Poor dietary patterns, such as the consumption of low-nutritional fast food, are major contributors to the increasing prevalence of obesity and NCDs. This study aimed to evaluate the relationship between nutrition literacy and eating behavior among active students at the Faculty of Public Health, Universitas Sam Ratulangi, Manado. This was an observational and analytical study. Primary data were collected through questionnaires distributed via google forms. The Spearman test showed a significant relationship between nutrition literacy and eating behavior in the following subscales: hunger (p<0.001), food responsiveness (p=0.022), satiety responsiveness (p=0.135), emotional under-eating (p=0.009), food fussiness (p=0.004), enjoyment of food (p=0.012), and slowness in eating (p<0.001). However, there was no significant relationship between nutrition literacy and the emotional over-eating subscale (p=0.591). In conclusion, there is a significant relationship between nutrition literacy and eating behavior in the subscales of hunger, food responsiveness, satiety responsiveness, emotional under-eating, food fussiness, enjoyment of food, and slowness in eating. However, no significant relationship was observed in the emotional over-eating subscale.
