ABSTRACT
Food is a basic daily needs, which are crucial for human survival (Law No. 18 of 2012). The food comes from food that is everything that comes from biological sources of agricultural products, agriculture, forestry, fisheries, animal husbandry, aquatic, whether treated or untreated designated as a food or beverage for human consumption, including additives for food, raw materials food, and other materials used in the preparation, processing, and manufacture of food or drink that everyone needs to be guaranteed to obtain quality and safe food. To determine whether there is the content of the preservative borax in meatballs meatballs served on a permanent stall in the district Malalayang city of Manado. This research is a descriptive survey with laboratory examination to portray how the content of the preservative borax in meatballs sold by merchants who have a permanent stall in the district Malalayang city of Manado. Based on the research that has been done, it can be concluded that There are kiosks that use borax meatballs in the meatball that is ready to be served.

ABSTRAK
Makanan merupakan kebutuhan pokok sehari-hari yang berperan penting untuk kelangsungan hidup manusia (UU No. 18 Tahun 2012). Makanan berasal dari bahan pangan yang merupakan segala sesuatu yang berasal dari sumber hayati produk pertanian, perkebunan, kehutanan, perikanan, peternakan, perairan, baik yang diolah maupun tidak diolah yang diperuntukkan sebagai makanan atau minuman bagi konsumsi manusia, termasuk bahan tambahan Pangan, bahan baku Pangan, dan bahan lainnya yang digunakan dalam proses penyiapan, pengolahan, dan/atau pembuatan makanan atau minuman sehingga setiap orang perlu dijamin untuk memperoleh pangan yang bermutu dan aman. Untuk mengetahui ada tidaknya kandungan zat pengawet boraks pada bakso yang disajikan pada kios bakso permanen di kecamatan Malalayang kota Manado. Penelitian ini merupakan penelitian survey deskriptif dengan pemeriksaan laboratorium untuk mengambarkan bagaimana kandungan zat pengawet boraks pada bakso yang dijual oleh pedagang yang memiliki kios permanen di kecamatan Malalayang kota Manado. Berdasarkan hasil penelitian yang telah dilakukan, maka dapat disimpulkan bahwa Tidak Terdapat kios bakso yang menggunakan boraks dalam bakso yang siap disajikan.
