ABSTRACT
Food safety is very necessary to focused on by each person in order to avoid a variety of health problems which arise as a result of consuming foods which not meet the health requirements. The use of formaldehyde as a preservative agent in food is harmful to health. A cause which can be generated from the use of formaldehyde was skin burn, respiratory tract irritation, allergic reactions and cancer as well. The purpose of this study was to know the presence of formaldehyde in various types of meat in Manado City supermarkets. Meat samples was taken at four major supermarket in the city of Manado, and they were the supermaket A, B, C and D. Schiff reagent was used in qualitative testing to detect the presence of formaldehyde in the sample. The used of Schiff's reagent is to show an aldehyde group marked with purplish-red color. The results of this study showed that meat samples from various supermarkets in the city of Manado does not contain formaldehyde and safe for consumption by people of Manado.

ABSTRAK
Keamanan pangan sangat perlu diperhatikan setiap orang demi terhindar dari berbagai masalah kesehatan yang timbul akibat mengonsumsi makanan yang tidak memenuhi syarat kesehatan. Penggunaan formalin sebagai bahan pengawet pada makanan sangat berbahaya bagi kesehatan. Akibat yang bisa ditimbulkan dari penggunan formalin ialah luka bakar pada kulit, iritasi pada saluran pernapasan, reaksi alergi hingga bahaya kanker. Tujuan penelitian ini yaitu mengetahui keberadaan formalin pada berbagai jenis daging di pasar swalayan Kota Manado. Sampel daging diambil pada 4 pasar swalayan besar di Kota Manado, yaitu supermaket A, supermaket B, supermaket C dan supermaket D. Pada pengujian kualitatif digunakan pereaksi Schiff untuk mengetahui adanya formalin pada sampel. Pereaksi Schiff ini digunakan untuk menunjukan adanya gugus aldehid yang ditandai dengan warna merah keunguan. Hasil penelitian ini menunjukan sampel daging dari berbagai pasar swalayan di Kota Manado tidak mengandung formalin dan aman dikonsumsi oleh masyarakat Kota Manado.
