ABSTRACT
Sodium nitrite usually used as a preservative agent in meat processed such as chicken crispy, but excessive and prolonged use could cause toxic effects to the body. This study aims to conformity the levels of the preservative sodium nitrite in chicken crispy in the Manado city according to the limits established by the government. Qualitative analysis was performed using reagents sulfanilic acid and N-1-naftiletilen-diammonium and characterized by the formation of a purplish red color, meanwhile the quantitative analysis conducted by using UV-Vis spectrophotometry at a wavelength of 545.50 nm. The results showed that the sample contained 1 of 8 positive samples containing sodium nitrite at 1.6035 mg / Kg. The use of sodium nitrite in a chicken crispy still in accordance with the limits set by the government in Permenkes No. 1168 / Menkes / Per / X / 1999, ie., a total of 125 mg /Kg.

ABSTRAK
Natrium nitrit biasanya digunakan sebagai pengawet pada daging olahan seperti ayam crispy, namun penggunaan yang berlebihan dan berkepanjangan dapat menyebabkan efek toksik bagi tubuh. Penelitian ini bertujuan untuk menganalisis kadar pengawet natrium nitrit pada ayam crispy yang ada di kota Manado dengan batas yang ditetapkan oleh pemerintah. Analisis kualitatif dilakukan menggunakan reagen asam sulfanilat dan N-1-naftiletilen-diamonium dan ditandai dengan terbentuknya warna merah keunguan sedangkan analisis kuantitatif dilakukan dengan menggunakan metode spektrofotometri UV-Vis pada panjang gelombang 545,50 nm. Hasil penelitian menunjukkan dari 8 sampel terdapat 1 sampel yang positif mengandung natrium nitrit sebesar 1,6035 mg/Kg. Penggunaan natrium nitrit dalam ayam crispy masih sesuai dengan batas yang ditetapkan oleh pemerintah dalam Permenkes RI No. 1168/Menkes/Per/X/1999 yaitu sebesar 125 mg/Kg.
