Pemanfaatan Kappaphycus alvarezii dalam Pembuatan Ice Gel Sebagai Media Alternatif Pengganti Es Batu Terhadap Penyimpanan Dingin
Utilization of Kappaphycus alvarezii in The Production of Ice Gel as an Alternative Medium to Replace Ice Cubes in Cold Storage

Fish was a very perishable food ingredient, so it must be handled immediately to maintain its freshness level. Ice cubes are the most common cooling medium used by the public in the fish cooling method. However, the used of ice cubes can only maintain a low temperature for a short time, so an alternative cooling medium is needed, which is ice gel that can maintain a low temperature for a longer time. Kappapphycus alvarezii is a type of seaweed that contains hydrocolloid which acts as a gelling agent. The purpose of this study was to determine of K. alvarezii ice gel ability as an alternative cooling media in maintaining low temperatures. The comparison of K. alvarezii and water used in the manufacture of ice gels are 1:0 (P0), 1:2 (P1), 1:3 (P2), and 1:5 (P3). The results showed each treatment had a different initial temperature, which is -15.77oC; -19,10oC; -20.67oC; and -18.1oC, and has a longer rate of changing temperature of the cooling the media. K. alvarezii ice gel which has the best ability as an alternative medium to replace ice cubes in maintaining low temperatures is in treatment P2 with an average initial temperature of -20.67oC, and was able to maintain the ice gel temperature below 0oC for 930 minutes (15, 5 hours).

Ikan merupakan bahan pangan yang sangat mudah rusak, sehingga harus segera dilakukan penanganan untuk menjaga tingkat kesegarannya. Es batu merupakan media pendingin yang paling umum digunakan oleh masyarakat dalam metode pendinginan ikan. Namun penggunaan es batu hanya dapat mempertahankan suhu rendah dalam waktu yang singkat, sehingga dibutuhkan media pendingin alternatif, yaitu ice gel yang dapat mempertahankan suhu rendah dalam waktu yang lebih lama. Kappapphycus alvarezii merupakan salah satu jenis rumput laut yang mengandung hidrokoloid bersifat sebagai pembentuk gel. Tujuan penelitian ini adalah untuk mengetahui kemampuan ice gel K. alvarezii sebagai media pendingin alternatif dalam mempertahankan suhu rendah. Rasio perlakuan rumput laut dan air yang digunakan dalam pembuatan ice gel adalah; 0:1 (P0), 1:2 (P1), 1:3 (P2), dan 1:5 (P3). Hasil penelitian menunjukkan masing-masing perlakuan memiliki suhu awal yang berbeda-beda, yaitu -15,77oC; -19,10oC; 20,67oC; dan -18,1oC, serta memiliki laju perubahan suhu media pendingin yang lebih lama. Ice gel K. alvarezii yang memiliki kemampuan terbaik sebagai media alternatif pengganti es batu dalam mempertahankan suhu rendah yaitu pada perlakuan P2 dengan rata-rata suhu awal yaitu -20,67oC, dan mampu mempertahankan suhu ice gel di bawah 0oC selama 930 menit (15,5 jam).
