Pengaruh Penambahan Ekstrak Wortel (Daucus carota) sebagai Antioksidan terhadap Mutu dan Daya Awet Produk Diversifikasi Bakso Ikan Tuna (Thunnus sp.) Tinggi Protein

Diversifying processed fish products is an effort to show the public that fish which is typically consumed fried, grilled, or cooked whole can be made more appealing while retaining its nutritional value, making it suitable for consumption by all segments of society. One such product that is currently very popular is tuna fish balls. Fish balls are high in protein and water content, making them susceptible to spoilage; as a result, processors typically preserve them with synthetic preservatives such as borax and benzoic acid, which are harmful to the human body. Therefore, the use of carrot extract as a natural preservative is essential, as carrots contain antioxidants (beta-carotene) that can inhibit the growth of microorganisms, thereby extending the shelf life of tuna fish balls. The objectives of this study are to examine the effect of adding 30% carrot extract, and to produce safe, healthy, and high-quality tuna fish meatballs. The research method used was exploratory. The test parameters included pH, moisture content, and total bacterial count. The results showed that the pH, moisture content, and total bacterial count of the tuna fish balls soaked in 30% carrot extract were lower than those of the unssoaked samples. The pH, moisture content, and total bacterial count of the tuna fish balls treated with carrot extract still met the quality and safety requirements for fish balls. Thus, it can be concluded that 30% carrot extract can be used as a natural preservative in fish balls.

Diversifikasi olahan ikan merupakan upaya untuk memperkenalkan kepada masayarakat bahwa ikan yang biasanya dikonsumsi dalam bentuk digoreng, dibakar atau dimasak dalam keadaan utuh dapat dibuat lebih menarik dan tetap bergizi sehingga dapat dikonsumsi oleh semua kalangan, Salah satu produknya yang sangat populer saat ini adalah bakso ikan tuna. Bakso mengandung protein tinggi dan kadar air tinggi sehingga rentan terhadap kerusakan sehingga masyarakat pengolah biasanya mengawetkan bakso dengan pengawet sintetis seperti boraks dan asam benzoat yang berbahaya bagi tubuh manusia. Oleh karena itu penggunaan ekstrak wortel sebagai pengawet alami sangat dibutuhkan karena wortel mengandung antioksidan (betakaroten) yang dapat mencegah pertumbuhan mikroorganisme sehingga produk bakso ikan tuna memiliki daya awet yang lebih lama. Tujuan penelitian ini adalah untuk melihat pengaruh penambahan konsentrasi ekstrak wortel 30% dan untuk mendapatkan bakso ikan tuna yang aman,sehat dan bermutu. Metode penelitian secara eksploratif. Parameter uji yang dilakukan adalah uji pH, kadar air dan total bakteri. Hasil yang diperoleh yaitu: untuk nilai pH, kadar air dan total bakteri dari bakso ikan tuna yang direndam dalam ekstrak wortel 30% lebih rendah dibandingkan dengan yang tidak mengalami perendaman. Nilai pH, kadar air dan total bakteri bakso ikan tuna ekstrak wortel masih sesuai dengan persyaratan mutu dan keamanan bakso ikan. Dengan demikian dapat disimpulkan bahwa ekstrak wortel 30% dapat dijadikan sebagai pengawet alami pada bakso ikan.
